15 Minute Pumpkin Pie Oatmeal {Vegan}

Hello my hungry friends,

So technically it’s not fall just yet….but yesterday marked the one month countdown to the Autumn Equinox! YAY!

So call me hobby lobby if you want, but I could not wait to start busting out the acorn squashapple & pumpkin recipes. Yes all have been delicious, with the exception of my poor apple pie, only because I have messed up on my dough twice now and had to take a mental break for a bit before trying again. Idk if it’s the pregnancy hormones or if pie crust just does that to you, but I have cried over my bad dough both times….why can’t it work…whyyyy? 🙁 Grrr.

Anyyyyways for my first pumpkin recipe of 2016 I wanted to start off with the most important meal of the day, yes you got it…BREAKFAST! I love breakfast and am always happy to start my day with a delicious bowl of oatmeal….its one of my favorite meals! And this pumpkin pie oatmeal is no exception!

15 Minute Pumpkin Pie Oatmeal {Vegan}

When enjoying a slice of pumpkin pie, I typically add a nice scoop of my deliciously healthy coconut whipped cream on top, so I thought…why not add that to my oatmeal??

OMG, I am so glad that I did! It made my oatmeal taste even more delicious, it melted perfectly right into the meal! Plus, I used the liquid half of the coconut milk for the oatmeal recipe, so it was the perfect excuse to just whip up the left over coconut milk…right right? Anyways, I was extremely surprised at how close this oatmeal tasted like the real deal, and I used healthy unprocessed ingredients win-win! I think I surprised Shane quite a bit with this meal as well, he scarfed it down before I could fill up my bowl and sit down…and ps: his bowl was much bigger than the little ramekin one in the images!

This was a super simple recipe and I am so happy to share it with you all. I hope you enjoy 🙂

  1. In a medium pot, bring water to a boil. Feel free to add a pinch of salt.
  2. Add oats in and lower heat to a simmer. Cook for 12 minutes.
  3. Meanwhile, mix your pumpkin, syrup, vanilla and spices together.
  4. Once oats have finished cooking, add your coconut milk, pumpkin mixture, and butter to the pot and stir well. Cook for 1-2 minutes and remove from heat.
  5. Top with any of the suggested toppings and enjoy a little bit of fall.
