Hello loves!

I hope that you all enjoyed your fourth of July this weekend! I spent some time at my mom’s home in East Texas, of course eating a ton of grilled veggies and chilled fruits. And what is fourth of July without some red, white & blue desserts?? Luckily for me I had a delicious recipe in mind for this past weekend….blueberry cinnamon roll muffins! Yes they do exist.

Now, I had always wanted to make my own cinnamon rolls from scratch but am reluctant with dough recipes…more like the process of moving the rolled out dough…not a fun task for me. Anywho, I made this recipe a few weeks back for Shane and his coworker’s. However, I did not add icing because we were cutting back on sugar for a while…hey it’s an addictive food {read about the dangers of sugar here}. However to create a red, white & blue effect this last time, I sprinkled a tiny bit of powdered sugar on top with some homemade strawberry syrup. Yum!!


Since it is no longer the fourth, I will leave the topping decision to you!! I have heard that honey was used from one of Shane’s coworkers. These guys are so flavorful that you might not even want a topping. The juicy blueberries are a treat for the crispy outer layers. I loved baking these in muffin tins because they shaped so wonderfully while cooling down. They are more of a POP right at your face instead of a short wide cinnamon roll.


The recipe I found online was from PortandFin, I always love to see people baking with fruits and berries and just had to try it. I made a few tweeks here and there and am very pleased with the outcome {both times} and I hope that you will be just as pleased! Blueberry Cinnamon Roll Muffins


  • 2 1/2 Cups Flour, plus more for surface area
  • 2 Tablespoons Sugar
  • 3 Teaspoons Baking Powder {make sure to get non-aluminum}
  • 1 Teaspoon Salt
  • 1/4 Cup Vegan Butter {softened}
  • 3/4 Cups Coconut Milk
  • 1 Egg {have not tried egg sub yet}
  • 1/4 Cup Vegan Butter {melted}
  • 1/2 Cup Coconut Palm Sugar {brown}
  • 4 Teaspoons Cinnamon
  • 1 1/2 Cup Fresh Blueberries


  1. Preheat oven to 400°. Get out your kitchen aid with your mixer attachment and dough hook. Now mix together your dry ingredients {flour, sugar, baking powder and salt}.
  2. Now switch to your hook and mix in your softened butter, once blended in add your milk and eggs until you get a sticky dough. {Note: I have not yet tried an egg substitute for this just yet, but will update with the outcome soon!}
  3. Flour your surface area and roll dough into a {somewhat} rectangle about 1/4 inch thick.
  4. Now Baste your dough with the melted butter and coat with sugar & cinnamon.

  5. Sprinkle your delicious blueberries.

  6. Using a pizza cutter, slice 12 strips of dough and roll each into the form of a cinnamon roll.

  7. Place each roll in a medium to large muffin tin.
  8. Bake for 25-30 minutes, let cool for 5 then transfer to wire rack.
