Broccoli Kale Veggie Pizza {with Basil Pesto}

Hello my hungry friends,

A few weeks ago we were having a movie night with Ava and were watching Inside Out….first off that is NOT a movie a pregnant woman should be watching because I had to explain to Ava why I was crying about 4 times….seriously pixar? But regardless or the tears I shed, there was a specific scene that stuck with me and gave me a bad taste {pun totally intended}.

They had just moved to San Francisco and decided to go out for pizza, however the only pizza that they served was broccoli pizza. Of course they made a big scene about how disgusting that was and so on. Well the irony of the whole situation was that we were literally eating broccoli pizza while watching the movie, and let me tell you…broccoli on pizza is pure genius! I understand that it was all in good humor and meant to be a joke, but when healthy food choices are made out to be the bad guy or super disgusting and aimed towards children, I can’t help but get a tad bit turned off.

Am I the only one thinking this?

Anyways in hopes to prove them wrong I would love to share with you my delicious pizza recipe that is a treasured treat in the Squires household to see if you too find it as delicious as we do. I also want to mention that in the movie I believe they used a red sauce and that was a major downfall in the pizza, which is why I switched over to using basil pesto after the second time I made it…is so much more flattering and flavorful this way, trust me. It just goes perfectly with the sautéed vegetables.
Broccoli Kale Veggie Pizza {with Basil Pesto}

    • 1 head of broccoli (chopped)
    • 1 large handful of chopped kale
    • 2 garlic cloves (minced)
    • 2 tsp sea salt
    • 3-4 tbsp olive oil
    • basil pesto (desired amount)
    • pizza dough
    • Italian blend shredded cheese {desired amount)
  1. Pre heat medium-large pan on med-high. Pre heat oven to 425° (place pizza stone in oven if you’re cooking with one)
  2. When pan is heated, pour in olive oil and add broccoli. Mix in with oil and cook for 4-5 minutes, making sure to stir throughout to prevent burning.
  3. Add in kale, salt and garlic and continue to stir. Cook for another 3-4 minutes, remember to stir so garlic doesn’t burn.
  4. Meanwhile spread dough out to desired size and add your pesto, we like to add a lot in our house but add as little or much as you’d like.
  5. Spread your cheese on next to your desired amount as well.
  6. Remove veggies when broccoli is cooked through. Using a slotted spoon, scoop out your veggies and garlic and top onto your pizza. (Using a slotted spoon helps to decrease the amount of oil on your pizza).
  7. Place on pizza stone or baking sheet and cook for 12 minutes.
  8. Remove from oven and let sit for 5 minutes (this is the hard part)
  9. Slice into pieces and enjoy your delicious green pizza.
