Hello my hungry friends,

Have you noticed all the Valentine’s holiday merchandise taking up the aisles in your grocery store lately? The chocolate hearts, chocolate roses, chocolate fondues…chocolate chocolate chocolate! As much as I secretly love chocolate I don’t like to buy that much at a time, because Ava loves chocolate just as much and as we discussed in our last Family Friday post, 2 year olds have an immature prefrontal cortex, needless to say her impulse to eat all the chocolate is not something I want to see her suffer through.

I do, however, enjoy all the love in the air during this time of the year and what better way to tell someone you love them than by making them heart shaped cookies??? Ava and I set out to make the man of our dreams some tasty chocolate cookies to enjoy. It was fun making these with Ava, although she did eat more dough than cookie…prefrontal cortex I know! I was so proud to see her roll the dough and cut the shapes with the cookie cutters, she even helped wash the dishes!!

These cacao cookies are a small crispy treat drizzled with white chocolate and crushed peppermint to throw in some red for Valentine’s Day. I know this doesn’t look like the healthiest snack and you might be surprised as to why they are on Om Livin’ but, they really do not contain that much sugar and since we are using coconut sugar we get the added benefits of that extra potassium for bone health, I used cacao powder instead of coco and the white chocolate is drizzled not glazed so I mean, I did try to make it healthy! But I couldn’t resist sharing this recipe with you guys!

Cacao Cookies with a White Chocolate Drizzle & Crushed Peppermint


 

Ingredients

  • 1/2 c flour
  • 1/4 c cacao powder
  • 1/8 tsp salt
  • 1/4 c coconut oil
  • 1/4 c coconut sugar
  • 1 egg or egg substitute like chia or flax
  • 1 tsp vanilla
  • 1/2 c white chocolate chips
  • 1/4 c crushed peppermint

Method

1. Add your oil & sugar in your mixer and mix until light and fluffy, about 45 seconds to 1 minute.

2. Next add your egg and vanilla and mix for another 30 seconds or so.

3. Add your cacao powder and salt mix until evenly distributed and then add your flour in and mix again. Your dough will start off crumble-y but will soon form together, once formed mix for maybe another 10 seconds and add onto a cacao/coco powdered surface.

4. Roll your dough out at about 1/4” thick. Cut your shapes and add onto your baking sheets. (I did not need to use parchment paper since the oil doesn’t stick. you can if you want to be safe though.)

5. optional: add cute little imprints from stamps to show your love for your cookie eaters!

6. Preheat your oven to 350° and place your cookies in the refrigerator until oven is heated.

7. Once oven is heated, remove baking sheet and immediately add to oven. Bake for 11 minutes.

8. Here is the hard part…once cookies are done, remove and let them sit for 8 minutes! They have to harden before you move them, so resist the urge!

9. Meanwhile, melt your chocolate chips by filling a pot half way up with water and set on med-high. Place a glass bowl or cup (something that is about an inch taller than the water) in the middle. Pour your chocolate chips in and stir until melted fully.

10. Once your cookies are done, drizzle your chocolate over your cookies and generously sprinkle your peppermints on top.

11. Refrigerate for 10-15 minutes and enjoy!

Not too bad huh? Although Shane is more of a chewy cookie fan, he still gobbled these up! So tell your valentine that you love them this year by making a healthy chocolate treat!
