Coconut Water and Mixed Berry Popsicles Recipe

Hello my hungry friends,
As excited as I get to celebrate the Summer Solstice each year, I’ve never truly enjoy the extreme heat that comes with the Texas Summers. Although this year has shown mercy with quite a bit of rain throughout the months, few!  On those days of intense heat Ava and I like to play a game where we name all the things we can think of that are cold. One day in particular, Ava just kept saying coconut water, which made me laugh really….that’s a crunchy child for you! 
 
Then it got me thinking about how cold we could get that delicious and nutritious drink….hmmm. 
 
So after going on amazon and getting these awesome popsicle molds, Ava and I started coming up with some popsicle recipes to try out. Of course coconut water is the main (and basically only) ingredient, along with a few sliced & diced fruits she chose. As we patiently waited our two days (yay amazon prime) for our package to arrive.

Compared to other drinks with electrolytes most coconut waters can be filled with preservatives, artificial ingredients, neurotoxins, and even GMOs. Although coconut water is still a healthier alternative than other sports drinks, make sure to always check the ingredients before choosing your brand of coconut water. Many are added with extra sugar!
 
Personally when buying coconut water, I try to get as close to the source as possible…which means, I actually buy the young thai coconuts! During summers, I tend to buy about 3-5 a week for the Squires household, because it’s such a great way to help stay hydrated and refreshed throughout the afternoons. Breaking into these bad boys is actually a lot easier than you would think, either hammer a (cleaned) screwdriver in 3 different spots on the top or if you prefer the meat such as we do, I suggest investing in the coco-jack (click here for a special OmLivin 10% off discount by using the code OmLivin). This baby is amazing! You simply use their mallet and “hole puncher” (that’s what we call it) and once all your liquid is consumed, use the meat scooper to grab all your meat inside. They also have straws you can buy but we use these stainless steel ones from amazon. (Does anyone else find amazon as addicting as I do??)
 
PS: if you add a bit of cinnamon to your meat it’s really delicious! Do you add any spices to your fresh coconut meat? 
 
 
However, if we are planning to go on a road trip where a big ol’ coconut isn’t feasible, I always grab a Harmless Harvest for the road. Their coconut water might be skipped over by many due to its higher price, but this brand uses organic coconuts and is sold in its raw form!
 
Nothing added, nothing heated, just pure delicious coconut, literally like the real thing.
 
And believe me, I’ve had enough of the real thing to notice the difference between all the coconut waters. I love how just like a coconut, every harmless harvest bottle has its own unique flavor (and color). Regardless of what coconut water you choose for your popsicles, make sure you know what you are buying!

Ingredients
  1. Coconut Water
  2. Fresh Berries (blueberries & raspberries)
Instructions
  1. Fill molds half way with coconut water
  2. Drop your berries and cherries in to your liking
  3. Fill remainder up with coconut water
  4. Add lids or popsicle sticks
  5. Freeze for 3-4 hours
  6. Enjoy
