Homemade Almond Milk Recipe

Hello my hungry friends,

So if you follow me on instagram you would know that I recently got a vitamix! I remember cracking a smile telling Shane that I never thought I would grow up to be the girl ecstatic about getting a blender. (Funny story I got a new iron a few weeks later and was pretty thrilled about that as well). But the second we got home with that baby, I watched the DVD a few times and went through the mini cookbook until I pretty much memorized the recipes. Needless to say, the Vitamix has it’s work cut out for it. One of my favorite things to make now is pure, delicious, raw, almond milk!

I was having trouble buying most almond milk brands due to the fact that the majority of them use carrageenan, which is a neurotoxin. Carrageenan is a process where extractions from edible seaweeds are used in meat and dairy products. I have even seen this ingredient in juices, which is a shame. This neurotoxin is used as a thickener and stabilizer. Carrageenan is prohibited in the EU for infant formula and organic foods, however in the US it is legal to be in both organic and infant formulas. Please please, do your research and learn about this ingredient, this sneaky thing is showing up in more and more processed foods.

Update 2016: I have started seeing more almond milk brands saying their products no longer use carrageenan! Way to go, our consumer choices are making a difference!!

Anyways, back to the almond milk…after getting my vitamix, I decided that I was going to start making my own milk! I got a nut bag from Natural Grocers, dates for the sweetener and organic raw almonds in bulk! Got home and was able to make my very own almond milk in 45 seconds!! Of course the “milking” took a little longer than that, but I actually enjoy the milking part…I feel like a vegan farmer! ha!
I have to be honest and tell you that when I first tasted that milk it was something that I had no expected it to taste like.

It was seriously……the.best.almond milk…. I’d ever sipped.

Shane had no words, only gulps. That first batch disappeared fairly quick actually now that I think about it. In this time I have experimented with a few other sweetener such as maple syrup and honey and they just weren’t up to par with the dates.They just go so well with the almonds and helped to make it frothy and more like real milk texture in my opinion.

  1. 2 cups almonds
  2. 5-8 dates {the more dates, the sweeter the taste}
  3. 6 cups of ice cold water {strain so no ice is in blender}
  4. nut bag and funnel are needed
  1. Pour all ingredients into your vitamix or blender
  2. Start on variable 1 to 10, then high for 45 seconds.
  3. Get a large bowl or pot to lay your nut bag in. Pour the milk through the bag and then “milk” the bag. I have a pretty legit system where I loop the strings through my upper cabinet knobs to make milking easier.
  4. Use a funnel to pour your milk into an air tight glass container, I use old mason jars or juice bottles.
  5. Sip and enjoy!
