Vegan Oatmeal Chocolate Chip Cookies

So I know that I have been on a sweets kick lately, but with the holidays coming up that is pretty much all you’ve been asking for. But I promise I will start posting some hearty and healthy recipes again next week!

Oatmeal cookies are a house favorite around here and I figured that we weren’t the only ones who felt that way. The tricky thing about oatmeal cookies is making this the right consistency. Too much flour or oats will cause  the cookies to be too dry, however too little will cause them to crumble while picking up. Neither are doable for a cookie enthusiast. This dough also requires refrigeration time to keep from spreading too much and becoming flat and burnt. Baking cookies is a science I tell ya!

Vegan Oatmeal Chocolate Chip Cookies

Ingredients
  1. 1 vegan egg (1 tbsp chia seeds+1 tbsp water- sit for 15 min)
  2. 1/2 cup of vegan butter or coconut oil
  3. 3/4 cup unrefined coconut sugar
  4. 1/2 brown banana
  5. 2 tbsp vanilla
  6. 1 1/2 cup old fashion oats (not instant)
  7. 3/4 cup flour
  8. 1 tsp pumpkin pie spice
  9. 1/2 tsp salt {I like pink Himalayan sea salt}
  10. 1/2 tsp baking soda
  11. 1 1/4 cup vegan chocolate chunks {I use enjoy life.}
  12. 1/2 cup walnuts or raisins
Instructions
  1. Mix your chia egg, butter, sugar, banana and vanilla in your stand mixer (or electric mixer) on medium-high for 2-3 minutes or until texture is consistently creamy.
  2. Stop your mixer and scrape down sides and add in your flour, oats, pumpkin spice, baking soda and salt on low for about 1 minute.
  3. Stop and scrape down the sides again before adding the chocolate chips, nut or raisins and mix on low for about 25-35 seconds.
  4. Using either a cookie scoop or a large spoon divide your dough into 12 equal sized balls onto your cookie sheets and flatten slightly.
  5. Place cookie sheets in refrigerator for 2-3 hours to chill.
  6. Preheat oven to 350F.
  7. Place baking sheets in oven for 11-13 minutes minutes. Remove and allow cookies to continue cooking on baking sheet for another 11 minutes.

    Ashleigh, these look amazing. I know my husband would love them. I see you list flour in the recipe. What sort of flour is that? Wheat? He’s been avoiding wheat so I assume I can use another flour such as oat flour. I usually make my own from oats in my little nut grinder. Would that work do you think?

    Wow! Those look great! I love how they look just as delicious as any store bought cookies (maybe even better!) and that they are so much healthier for you! I’ve been trying to start eating less processed foods and other things that are bad for my body, and this recipe looks like the perfect sweet treat! I can’t wait to try it!

      Yes, I bet these would surpass the store bought cookies in a taste test! 🙂 I have decided when we move that I will be making everything I can from home!! The less processed I can get the better! 🙂 I’ll be sure to post all the recipes once I perfect them! 🙂
