How to Make Vegan Fried Rice

Hello my hungry friends,

A meal that has been popping up on our plates over and over again lately has been fried rice! I have been loving my rice cooker that I recently got (Funny story: the same week I got my rice steamer, I visited an asian market and holy cow did you know those things can get into the $700-$1,000s??? Don’t believe me see here! ) I have been experimenting with different sauces, veggie combinations and rice steaming methods. 

This version I like best, because it’s so simple to put together and as a mama, I like simple….I love it in fact!

Not only is this recipe mouth watering delicious, but it contains the wonderful Turmeric!

What’s turmeric you ask???

Well Turmeric is defined on google as

a bright yellow aromatic powder obtained from the rhizome of a plant of the ginger family, used for flavoring and coloring in Asian cooking and formerly as a fabric dye“.

{Side note: you can totally use turmeric powder as a natural yellow dye for frosting and foods.} Turmeric has been used for over 2,500 years in India, and has been shown to have many medicinal properties to it, it’s most famous benefit being it’s anti-inflammatory properties.

Some other benefits include:

  • A natural antiseptic, antibacterial and disinfectant.
  • Reduces the risk of childhood leukemia {mommy bonus}
  • A natural painkiller
  • A natural liver detoxifier
  • Removes amyloyd plaque buildup in the brain, which in turn can prevent Alzheimer’s disease
  • Boosts metabolism
  • A natural anti-depressant
  • A natural treatment for arthritis
  • Boosts the effects of chemo drug paclitaxel and reduces its side effects.
  • Any many more studies are proving to show cancer reduction or slowed growth in tumors in mice & rats

A quick and easy fried rice recipe to enjoy throughout your week.

Ingredients
  1. 1 head of broccoli {cut into small pieces}
  2. 2 carrots {shredded}
  3. 2 zucchinis {shredded}
  4. 1 bell pepper {sliced}
  5. 2 cups jasmine rice
  6. 2 garlic cloves {minced}
  7. Turmeric Powder
  8. Liquid Aminos
  9. Salt {Pink Himalayan Sea Salt is what I use}
  10. Coconut or Sesame Oil
  11. Sesame seeds
Instructions
  1. Steam your rice, in the meantime add oil to a wok or large skillet and turn heat to medium.
  2. Add all the veggies and cook for about 5-8 minutes.
  3. Add your garlic in with the veggies, stirring to ensure it doesn't burn. Lower heat to medium low once vegges are tender.
  4. Sprinkle your turmeric all over the veggies...I add a lot but if you're new to the spice just sprinkle a thin layer over.
  5. Add your cooked rice & liquid aminos {which is an alternative to soy sauce} to the skillet or wok.
  6. Mix well and boom! You're done, now sprinkle sesame seeds over each bowl & you got yourself a delicious lunch or dinner!!
