Healthy Broccoli Carrot Soup {Vegetarian & Delicious}

Hello my hungry friends,

Today I want to share with you one of my favorite things to make, broccoli soup. But this broccoli soup isn’t like all the rest…no no this is the delicious & healthy way to make broccoli soup.

Do you ever order broccoli soup at a restaurant only to find out it’s primarily melted cheese that has a few chunks of broccoli?

While that soup is sometimes tasty, the source of the cheese is questionable as well as the other ingredients in there. Not to mention, 80% of the time, it’s not vegetarian, seriously why is there a need for chicken stock in there?

I know that going to restaurants can be so much easier, quicker, more relaxing and so on, but the reality of it is, most restaurants will buy the cheapest food they can get and sell it for as high as they can.

If you do the weekly prepping like I mentioned in my last Sustainable Saturday, cooking at home can be just as quick & easy…add some tunes and bam you have the relaxing ambiance as well. But the most important part is that YOU know exactly what foods are going into your meals for you and your loved ones.

It might seem like I am on the soap box right now, but I am saying all this to convince myself as well. I understand the feeling of not wanting to cook at times, I enjoy being waited on from time to time, or not having to worry about the dishes after the meal.

But over the next few weeks I am hoping to find some fun ways to make these chores into something fun! (just wait it’ll come…hopefully!) If you have any tips feel free to let me know in the comments below….

ok so now on with this tasty soup recipe!

Broccoli Carrot Soup

  1. 2 cups Broccoli (chopped)
  2. 4 carrots (chopped)
  3. 1/2 cup frozen peas
  4. 2 cups milk (vegan unsweet I prefer flax milk)
  5. 3/4 cup cheddar cheese
  6. 1 veggie boullion cube
  7. 2 tablespoons Nutritional Yeast
  8. 1/4 cup northern beans or cannelloni beans (for a thicker soup)
  1. Steam broccoli & carrots for about 3-5 minutes
  2. Meanwhile, add peas, milk, cheese, bullion, nutritional yeast and beans to the blender (Vitamix works best in my opinion but any blender will do!)
  3. Once veggies are finished steaming add half to blender and blend on high (Vitamix start at variable 1 then move to 10 and then high) for 5 minutes! (If your blender isn’t big enough make in two batches)
  4. After 5 minutes, remove blender top and add in the rest of the veggies, blend on medium low for about 2 seconds then serve! Feel free to top with more cheese if desired!
