So last week Amanda & I decided to move our Wholesome Tuesdays to Wednesdays. Well Ashleigh…what is going to be on Tuesdays now?? Well our Wednesdays in the Kitchen are changing to …get ready for it…. Tasty Tuesdays!! Catchy huh?? Well today I am going to give you a very useful recipe.

Do you like pasta?? Me too, I love it…but do you want to know what I love even more than pasta?? Veggie Pasta…yup it’s a thing! A grain-free & healthy version of your favorite pasta dishes are now easier than ever to prepare. Now there are multiple ways to go about this nutritious alternative. I personally use the mandolin with the thinest blades, normally used for matchstick cuts or just the thinest setting for “flat noodles”. The spiralizer {which I can’t wait to get}, this is the easiest method so I’ve heard… or a veggie peeler can work as well.

The veggie of my choice for today is zucchini, one of Ava’s favorite green veggies. Not only was it fun making the noodles but this meal was just fantastic…in fact the only thing Shane had bad to say about it, was that there needed to be moreeee!

Zucchini Pasta with Chickpea & Roasted Delicata Squash

Baby Food Zucchini Noodles with Chickpeas

Zucchini Noodles with Chickpeas and Delicata Squash

Ingredients
  • 1 delicata squash – cut lengthwise & seeded
  • 4 tbs (or more) maple syrup
  • salt & pepper
  • 4 medium zucchinis – cut into noodles
  • 2 tbsp olive oil
  • 4 garlic cloves – minced
  • 1 – 2 tsp red pepper flakes
  • 1/2 cup chickpeas – cooked or canned
  • 1/4 – 1/2 cup of vegan mozzarella cheese
  • 1/4 cup of vegetable broth
  • chia seeds or sesame seeds – for topping
Instructions
    1. Preheat oven to 400°
    2. cut each delicata half into 1″ thick pieces, set aside
    3. In a mixing bowl add oil, maple syrup, salt & pepper & mix together, add in the squash & keep mixing
    4. Set squash onto baking sheet & roast for 20-25 minutes, flip around 10 minutes so each side is evenly browned
    5. While the squash is baking, put oil in a large skillet over medium heat & add in the garlic…yumm
    6. after about a minute add the red pepper flakes, broth, zucchini noodles and chickpeas. Cook for around 4-5 minutes, then start adding the cheese. Make sure to keep stirring so the cheese melts evenly & then remove from heat
    7. Once squash is done, take out & let cool while adding the zucchini pasta onto your plate(s)…then be creative with your squash 😀
    8. Top with chia or sesame seeds & enjoy this dish!!!

For Babies/Toddlers

  1. If adding delicata squash peel skin off. Cut noodles into thirds & half chickpeas if needed. {you know your baby’s needs}
